Curried Chicken or Turkey Salad

This chicken or turkey salad is jazzed up with curry, and loaded with goodness! It can be made ahead of time, chilled, and brought to room temp when ready to serve with your favorite sandwich bread. Flaky croissants are perfect!

Ingredients

  • 1.5 lbs chicken breast cooked and chopped, skinless, boneless or turkey breast
  • ½ cup plain whole Greek yogurt unsweetened
  • ½ cup mayonnaise real
  • 5 tsp yellow curry powder
  • 2 tsp honey pure
  • ½ tsp ground ginger
  • ½ tsp kosher salt more to taste
  • ½ tsp black pepper fresh ground
  • 1 medium red onion finely chopped
  • 1 large Mango peeled and chopped, ripe, semi-firm
  • 1 cup raisins
  • ½ cup cashews coarsely chopped, salted, roasted

Instructions

  1. In a bowl, whisk together Greek yogurt, mayonnaise, curry powder, honey, ginger, salt, and pepper.
  2. Add cooked/chopped chicken or turkey, onion, mango, and raisins. Carefully stir to combine well. Season with additional salt or pepper, to taste.
  3. Keep covered and chilled. Let salad rest at room temp at least 30 minutes before serving. Just before serving, gently stir in chopped cashews. Serve on your favorite sandwich bread.
