Curried Mango Dressing

Curried Mango Dressing blends fresh mango purée, garlic, lime juice, Dijon mustard, ginger, honey, curry powders, kosher salt, and olive oil into a smooth sauce. The result is a vibrant dressing with sweet fruitiness, warm curry spice, and bright citrus notes that works well on salads or as a sauce for grilled meats and vegetables.

Description

This Curried Mango Dressing starts by blending peeled, pitted mango with garlic and lime juice to create a smooth base with fresh fruit flavor and acidity. Dijon mustard, grated ginger, honey, curry powders, and salt are added to introduce spice complexity and subtle sweetness. The dressing is emulsified by slowly drizzling in extra virgin olive oil while blending, yielding a creamy and well-integrated sauce.

The curry powders provide mild heat and aromatic warmth, balanced by the bright citrus and sweetness of mango and honey. This dressing complements salad greens, especially those with spicy or bitter notes, and pairs well when drizzled over grilled chicken, pork, seafood, or steamed and fresh vegetables, adding a layered flavor boost without overwhelming the dishes.

The versatility of this dressing makes it useful for enhancing various meals where a slightly exotic, fruity, and spicy accent is desired.
