Curried Turkey Meatballs

Curried Turkey Meatballs are a great way to use leftover cooked turkey and mashed potatoes. Serve them with a yogurt, cardamom & herb dipping sauce.

Ingredients

  • 26 oz turkey cooked.
  • 6 oz potato mashed
  • 1 garlic bulb
  • 1 tsp garlic powder
  • 2 tsp curry powder
  • 1 egg
  • 3 tbsp avocado oil or any high temp oil.

Instructions

  1. Remove garlic skins from the cloves of garlic. Save these skins to make Vegetable Stock . Cut garlic cloves into smaller pieces.
  2. Pour oil into a preheated pan on medium heat and place the garlic into the preheated oil and sauté until golden brown. Remove the garlic from the pan.
  3. Add the turkey meat to a food processor bowl. Pulse meat for 1-2 minutes until well blended.
  4. Add the mashed potatoes, egg, garlic, curry powder and garlic powder.
  5. Pulse for about 30 seconds, or as long as it takes to mix everything well.
  6. With your hand or using a small food scooper, scoop out some of the turkey mixture and form into a ball. Feel free to make mini Turkey Meatballs.
  7. In the same pan you sautéed the garlic, add a little more oil to it, preheat it and add the turkey balls in to sauté.
  8. While the turkey balls are cooking, prepare the dip, by adding dried mint and cardamom to Greek yogurt.
  9. Mix well and add salt to taste.
  10. Serve the Curried Turkey Meatballs warm or at room temp with the yogurt dip.
