Curry Chicken Salad
Description
This Curry Chicken Salad recipe starts by preparing a creamy dressing from mayonnaise, plain yogurt, lemon juice, honey, curry powder, salt, and freshly cracked black pepper. The added yogurt lightens the dressing while providing a mild tang that complements the warmth of the curry powder. The chicken breast, seasoned simply with salt and pepper, is cooked by grilling or pan-cooking until done, then cooled and diced. Fresh celery and green onions provide crunch and a mild onion flavor; sliced almonds add nuttiness and extra texture, while raisins contribute bits of sweetness. Combining all ingredients and coating them in the dressing creates a dish with layered, vibrant flavors and a mix of textures. The curry powder type and amount can be adjusted to control the spice and aroma. This salad is versatile for luncheon sandwiches, on greens, or as a standalone dish.
Ingredients
Dressing
- ¼ cup mayonnaise $0.80
- ¼ cup PLAIN yogurt $0.34
- 1 tsp lemon juice $0.01
- ½ tsp honey $0.02
- 1 tsp curry powder $0.10
- ¼ tsp salt $0.02
- black pepper $0.02, freshly cracked, to taste
Salad
- 2.5 cups chopped cooked chicken** $6.67
- pinch salt $0.05
- pinch black pepper $0.05
- 2 celery $0.18, stalks
- 3 green onion $0.28, whole
- ½ cup almonds $0.61, sliced
- ½ cup raisins $0.59
Instructions
- Make the dressing by stirring together the mayonnaise, yogurt***, lemon juice, honey, curry powder, salt, and pepper in a small bowl. Taste the dressing and adjust the curry powder or salt if needed.
- Season both sides of the chicken breasts with a light sprinkle of salt and pepper. Cook the chicken breast in either a countertop grill or in a skillet until cooked through. Allow the cooked chicken breast to cool while you prepare the rest of the salad.
- Finely dice the celery and slice the green onions. Place the green onion, celery, sliced almonds, and raisins in a large bowl.
- Chop the chicken into small cubes and place them in the bowl with the celery, onion, almonds, and raisins. Stir to combine. Pour the dressing over top and stir to coat.
Notes
- Select a mild or preferred curry powder and adjust its quantity to taste, as strength varies by brand.
- You may use pre-cooked chicken, such as rotisserie, or cook boneless skinless chicken breasts by grilling or pan-searing; yield about 2.5 cups chopped chicken.
- Using both mayonnaise and yogurt in the dressing balances flavor and texture, but each can be used alone if preferred.
