Description
This Curry Udon recipe starts by sautéing thinly sliced onions in a neutral cooking oil until softened. Frozen thinly sliced beef is added and cooked through until browned. Water and dried bonito (hondashi) are added to create a flavorful broth, which is brought to a boil, then skimmed to remove any impurities. Japanese curry roux cubes are dissolved into the hot broth, thickening it and adding rich curry flavor. The pot simmers briefly to allow flavors to meld.
Meanwhile, udon noodles are cooked separately in boiling water according to package instructions, then drained. The thick, hearty curry broth with beef is ladled over the noodles in serving bowls. Chopped green onions add a fresh bite and mild sharpness that complements the warm curry broth and tender beef.
This dish serves well as a warming lunch or dinner, combining the chewy texture of udon noodles with savory curry and tender meat in a rich broth that highlights the combination of dashi and Japanese curry roux.
Ingredients
- 1 tbsp neutral cooking oil generic cooking oil
- 1 small onion
- 300 grams beef frozen, shabu shabu
- 3½ cups water
- 1 tbsp Bonito hondashi, dried
- 2 cubes curry roux
- 2 ervings udon noodles 240 grams x 2
- ¼ cup green onions
Instructions
- In a pot over medium heat, add the oil and saute the sliced onions for about 2 minutes.
- Add the frozen shabu shabu beef to the pot and continue to saute until the beef has browned throughout.
- Add the water to the pot alongside the dried bonito and bring it up to a boil. Feel free to skim off any fat or scum as the pot simmers.
- Put one cube of the curry roux in a large ladle and dissolve it by stirring/whisking the roux with some of the hot broth. Repeat with the second roux.
- Place the lid on the pot and let simmer for 5 to 10 minutes, so the flavours can meld.
- Meanwhile, bring a pot of water to a boil and cook the udon noodles according to the package.
- When ready, divide the udon noodles into two bowls and ladle the curry broth and beef over the noodles. Garnish with some green onions.
