Dark Chocolate Cherry Baked Oatmeal

Dark Chocolate Cherry Baked Oatmeal combines oats with protein powder, frozen cherries sweetened with sugar, dark chocolate chips, eggs, milk, maple syrup, and butter. Baked until set, it creates a warm, tender texture with pockets of sweet cherry and melted chocolate, topped with a drizzled chocolate sauce for added richness.

Description

In the Dark Chocolate Cherry Baked Oatmeal, old fashioned oats and vanilla protein powder form the base, enhanced with baking powder for lift. Frozen cherries are macerated with sugar to release juices and sweetness before being folded in with egg whites, milk, maple syrup, melted butter, and chopped dark chocolate chips. The batter is baked at 375°F in a greased 13x9 pan until set and golden. A chocolate drizzle made by melting dark chocolate chips with a bit of milk is piped over the cooled oatmeal, adding a rich, glossy finish.

The final dish offers a tender, slightly chewy texture from the oats with bursts of juicy cherry and bittersweet chocolate. It works well as a hearty breakfast or any time you want a comforting, baked oat treat. The recipe is designed to yield about six servings, making it suitable for sharing or meal prepping.

Ingredients

Servings
  • 3 cups old fashioned oats
  • 2 coops protein powder vanilla
  • 1 tsp baking powder
  • 1 lb cherries frozen
  • 1 tbsp sugar
  • 2 tbsp maple syrup
  • 1 tbsp butter
  • 10 tbsp egg or 2 eggs, white, liquid form
  • 2 cups milk
  • 2 tbsp dark chocolate chips

For the Chocolate Drizzle

  • 1 tbsp dark chocolate chips
  • 1 tbsp milk

Instructions

For the Baked Oatmeal

  1. Preheat your oven to 375°F.
  2. If your cherries are whole, cut them into halves or quarters. Sprinkle 1 tbsp of sugar over the top of the cherries and allow them to macerate.
  3. In a large bowl, mix together the oats, protein powder, and baking powder.
  4. Add in the egg whites, milk, syrup, 1 tbsp of melted butter, 2 tbsp of the chocolate chips, and the cherries. If you get the big dark chocolate chips you should cut them up a bit so you get more coverage.
  5. Spray a 13"x9" pan with oil and add the oat mixture.
  6. Bake for 35-40 minutes.

For the Chocolate Drizzle

  1. Melt 1 tbsp of the dark chocolate chips and 1 tsp or so of milk in the microwave for few seconds until they melt. Stir to combine and continue to thin with milk until you get a consistency that will allow you to pipe over the top.
  2. Add the chocolate to a small ziplock bag and cut a small hole in the corner. Pipe the chocolate over the top of the baked oatmeal.

Plating

  1. This recipe makes 6 servings. Cut the oatmeal into 6 equal pieces.
