Darn Good Chili Recipe
Description
This chili recipe starts by browning ground beef with diced onions and seeded jalapeno peppers until onions turn translucent. A homemade chili seasoning blend, incorporating chili powder, cumin, garlic, and other spices, is stirred in to coat the meat and vegetables. Kidney beans soaked overnight are added along with tomato sauce, diced petite tomatoes, Campbell's condensed tomato soup, water, masa harina, sugar, salt, and beef bouillon base to create a thick, flavorful sauce.
The chili simmers on low heat for about an hour until the beans are tender and flavors meld. The use of masa harina slightly thickens the chili, giving it a satisfying texture. The spice level can be adjusted with cayenne pepper according to preference.
Darn Good Chili is served with dollops of sour cream and shredded cheddar cheese, which cool and complement the spiced chili. Cornbread muffins make a traditional side. The recipe produces a filling, warming chili suitable for cooler weather or casual gatherings.

- 1 1/2 pounds ground beef

- 1-2 jalapeno pepper seeded and chopped

- 28 ounces tomato sauce canned
- 28 ounces diced tomatoes canned, petite
- 10.75 ounce tomato soup do not add water, Campbell's condensed, canned
- 1 cup water
- 2 tablespoons masa harina

- 2 tablespoons flour
- 3 tablespoons chili powder

- 1/2 teaspoon crushed red pepper or cayenne pepper, dried
- 1 teaspoon sugar
- 2 1/2 teaspoons salt
- 1/2 teaspoon garlic or 2 cloves fresh garlic, minced, dried, minced
- 2 teaspoons cumin
- 1 tablespoon beef bouillon base
- 1 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon black pepper freshly ground
- cayenne pepper , according to desired heat level
Instructions
- Heat some oil in a large Dutch oven or heavy pot and brown the ground beef, adding the onions and jalapeno peppers while the beef is still a little pink. Cook until the onions are tender and transparent. Combine the chili seasoning mix and add it to the ground beef and onions. Stir to combine.Add the remaining ingredients (except for the sour cream and cheddar cheese), bring to a boil, reduce the heat to low and cook until the beans are tender, or about one hour, stirring occasionally to prevent bottom from burning. Add more chili powder and salt to taste.Serve with a dollop of sour cream and some shredded Cheddar cheese along with some cornbread muffins.
