Dashi

Dashi (出 汁) is a delicious broth of konbu seaweed and katsuobushi (dried bonito flakes) that is a staple in Japanese cuisine.

Ingredients

Servings
  • 10 cups water cold
  • 3 oz. katsuobushi dried bonito
  • 2 oz. kombu seaweed

Equipment

  • Dutch oven

Instructions

  1. Add the cold water in a large Dutch oven.
  2. Add the kombu seaweed.
  3. Heat over medium heat without boiling then lower the temperature, cover and maintain the temperature at 150 F (65 C) for 1 hour over a very low heat.
  4. Add the bonito flakes into the broth and raise the temperature to about 185 F (85 C) without boiling.
  5. As soon as the bonito flakes go down completely to the bottom of the pot, about 4 minutes, remove from heat.
  6. Filter the broth.
  7. Let cool completely.

Notes

  • The dashi broth can be stored in the refrigerator for 2 or 3 days or for 1 month in the freezer.
