Description
These Date Balls blend chopped pecans and shredded coconut with pitted Medjool dates that act as a natural binder, producing a sticky, pliable mixture. Vanilla extract adds a subtle flavour depth. The mixture is formed into small balls, chilled until firm, then stored chilled to maintain their shape and texture.
The dates provide natural sweetness and a chewy consistency, complemented by the crunchy bits in the nut and coconut mix. The flavor is mildly sweet and nutty without added sugars or baking. Their no-bake preparation makes them accessible and quick to assemble.
The Date Balls work well as a portable snack or a light dessert. Chilling them firms the texture and prevents sticking. They can be stored in an airtight container in the refrigerator for up to a week or frozen for longer storage.
If the mixture becomes too wet, adding more nuts, coconut, or oats can firm it up. Conversely, if crumbly, adding more dates, nut butter, or honey helps bind the ingredients. Freezing individually on a tray before packing prevents sticking.
Ingredients
- 2 cups pecans
- 1 cup sweetened shredded coconut
- 2 cups Medjool dates pitted
- 1 teaspoon vanilla extract
Instructions
- Add the pecans and coconut to the food processor and process until chopped and fine.
- Add the pitted dates and vanilla and process again until the mixture is crumbly and sticky. Don't do this for too long, or it will become a little oily.
- Use a large cookie scoop to scoop out the mixture and then roll into a ball and place on a parchment paper lined baking sheet. Refrigerate for an hour and then store in a Tupperware in the fridge for up to 1 week.
