Date Energy Balls combine pitted Medjool dates, various raw nuts, and a pinch of sea salt processed into small, naturally sweet, and chewy bite-sized snacks. Their sticky, dense texture holds together well, offering a nutritious energy boost that can be stored refrigerated or frozen for convenience.

Description

This recipe uses Medjool dates blended together with raw nuts such as cashews, walnuts, almonds, or pecans along with a pinch of sea salt to form a sticky dough. The mixture is processed in a food processor until uniform and moist enough to easily form balls by hand.

After shaping into small balls, they can be eaten immediately or stored in a sealed container in the refrigerator for up to two weeks or frozen for up to three months. The dense texture and natural sweetness make them handy for on-the-go snacks or pre/post-workout energy.

For dry or hard dates, soaking them in warm water before processing helps soften the mixture. If desired, protein powder can be incorporated by decreasing the nut quantity and adding protein powder to the mix, adjusting nutritional content.

  • 1 cup Medjool dates about 10, pitted
  • 1/2 cup nuts cashews, walnuts, almonds, pecans, etc, raw
  • pinch of sea salt

Instructions

  1. Process: Add dates, nuts and salt in a food processor fitted with the S-shaped blade. Process until mixture is well combined and sticking together.
  2. Form balls: Scoop dough from food processor with your hands (or a cookie scoop) and form into small balls using your hands. Enjoy right away or store for later.
  3. To store: Place balls into a sealed storage container and store in the fridge for 1-2 weeks or the freezer for up to 3 months.

Notes

  • If dates are hard or dry, soak them in warm water for 10-15 minutes before use, draining well.
  • To add protein powder, reduce nuts to 1/3 cup and mix in 2 tablespoons protein powder for about 10 grams protein.
