Description
Date-Nut Muffins use coarsely chopped pitted dates soaked briefly in boiling water to soften and bring moisture to the batter. The mixture includes corn oil, vanilla, whole wheat and all-purpose flours, sugar, chopped walnuts, and baking soda for leavening. Combining the wet and dry ingredients gently yields a tender muffin crumb.
Baked at 375°F for about 25 minutes, the muffins turn golden on top with a moist interior studded with chewy sweet dates and crunchy walnut pieces. Their texture balances sweetness from the dates with the earthiness of walnuts and the slight nuttiness from whole wheat flour. - 9 ounces dates coarsely chopped, pitted

Instructions
- Preheat oven to 375 degrees.
