Deconstructed Sushi Bowls

These Deconstructed Sushi Bowls allow you to enjoy all of your favorite sushi flavors in a quick and easy 30-minute meal for the busiest of days.

Ingredients
- 2 cups jasmine rice
- 1 lb imitation crab
- 4 .17 ounce packs seaweed
- 1 bunch scallions
- 1 avocado
- 1 English cucumber
- ⅓ cup pickled ginger
- ½ cup sriracha mayo
Instructions
- Cook the rice according to package directions.
- Prep the rest of the ingredients by breaking up the crab, slicing the seaweed, slicing the scallions, slicing the avocado and dicing the cucumbers.
- To serve, set up a bar with all of the ingredients and let everyone assemble their own bowls.

- To easily break up the crab, shred it using the paddle attachment on a stand mixer on the stirring speed.
