Dehydrated Kiwis

Crispy kiwi chips made in the dehydrator.

Ingredients

  • 8 kiwi
  • 1-2 Tablespoons sugar optional
  • 1 Tablespoon lemon juice optional

Instructions

  1. Wash and dry the kiwis. Peel them if desired, or leave the skin on for added fiber and texture.
  2. Slice the kiwis into 1/4" thick rounds using a sharp knife or mandolin.
  3. If desired, toss the kiwi slices with a little bit of lemon juice and/or sugar.
  4. Arrange the kiwi slices in a single layer on the dehydrator trays, making sure that they don't overlap. If using an oven, place them on a baking sheet lined with parchment paper.
  5. Dehydrate at 135°F. Let the kiwi slices dry for 6-8 hours, or until they are crispy and chewy. Keep an eye on them during the last hour or two of dehydrating to ensure that they don't over-dry and become brittle.
  6. Once the kiwi slices are done, remove them from the dehydrator or oven and let them cool to room temperature.
  7. Store the dehydrated kiwi slices in an airtight container. They can be stored at room temperature for up to a month, or in the refrigerator for up to six months.
