Description
This pasta dish starts by cooking shallots, garlic, diced tomatoes, and capers in butter and olive oil, seasoned with dried oregano, salt, cracked black pepper, and red chili flakes. The ingredients cook down over 15 to 20 minutes to meld flavors and soften the tomatoes. Afterward, the mixture is blended into a smooth, creamy sauce that coats the spaghetti.
Spaghettini is prepared separately, rinsed, and cooled slightly before combining with the sauce. Burrata cheese is gently folded in, melting partially to add richness and creaminess to the pasta. Each serving is topped with additional burrata, fresh basil leaves, and a sprinkle of red chili flakes to introduce freshness, creaminess, and a hint of heat.

Ingredients
- 2 tbsp. butter unsalted
- 2 tbsp. olive oil
- 5 shallot diced, medium
- 4 garlic minced, large cloves
- 2 tomato diced, large field variety
- 1/3 cup capers
- 2 tsp. oregano dried
- 2 tsp. salt
- 1 tsp. black pepper cracked
- ½ tsp. chili flakes
- 250 g spaghettini dried
- 4 oz burrata cheese
- basil to garnish, fresh
Instructions
- Add the unsalted butter, olive oil, shallots, garlic, diced tomatoes, capers, dried oregano, salt, cracked black pepper and red chili flakes to a medium-sized pot over medium high heat.
- Allow the ingredients to cook down and combine for 15 – 20 minutes.
- While the ingredients cook down, prepare the Spaghettini according to the instructions on the package in a large pot.
- Rinse and strain.
- Transfer back to the pot and allow to cool slightly. You can a small amount of olive oil to prevent sticking.
- After the 20 minutes, transfer the sauce ingredients to a blender.
- Blend until smooth and creamy. Adjust seasoning to taste.
- Pour the sauce into the large pot with the Spaghettini and mix to combine.
- Split apart the burrata cheese and add half of it to the pot, mix to melt the cheese.
- Serve each pasta serving with extra burrata, fresh basil, and red chili flakes!
