Description
This recipe sautés diced green bell pepper, onion, and garlic until tender but not browned, then combines them with beaten eggs seasoned with onion powder and salt, shredded cheddar cheese, and diced ham. Ingredients
- 1 teaspoons olive oil or 1/4 - 1/2 tablespoon of butter
- 1/2 green bell pepper diced
- 1/3 cup onion diced
- 2-3 cloves garlic minced
- 1/3 cup ham leftover, diced
- 4 egg
- 1/3 cup cheddar cheese shredded
- 1/4 teaspoon onion powder
- 1/4 teaspoon salt fine ground
- 1/4 teaspoon parsley dried

Instructions
- Pre-heat waffle iron. For ours, we set it to 2-3.
- In a small sauté pan, heat olive oil or butter and add onion, garlic, and pepper. Sauté for 3-5 minutes until onions are tender, but not browned. Remove rom heat, and set aside.
- In a medium sized bowl, add eggs, salt, and onion powder and whisk eggs. Add shredded cheese and mix well.
- Add cooked onions, peppers, and garlic to the eggs and mix well.
- Give waffle iron a quick spray with cooking spray to grease.
- With a ladle or a serving spoon, spoon egg mixture in waffle iron, ensuring that you're evenly distributing the ham, pepper, and onions.
- Cook on level 2-3 for 3-4 minutes until eggs are fully cooked and slightly browned.
- Serve immediately.
Notes
- Use a Belgian waffle maker for four waffles; smaller waffle irons yield fewer but larger waffles.
- Substitute vegetables, cheese, or meats as preferred to customize flavors.
