  • 1/4 cup mayonnaise
  • 1 1/2 teaspoon mustard (classic or dijon)
  • 1 teaspoon pickle juice
  • 1/2 teaspoon sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • paprika pinch

Instructions

How to hard boil eggs:

  1. Place your eggs in a medium saucepan and cover with water. Bring the water to a boil over high heat.As soon as the water begins to boil, cover the saucepan, and remove it from heat.Let it sit, covered for 10-12 minutes.
  2. Meanwhile, fill a bowl with ice water to make an ice water bath. Transfer the hard boiled eggs with a slotted spoon or strainer to the water bath to stop the cooking process. Let sit in the water bath for 3-5 minutes and then peel.

Deviled Eggs:

  1. Cut each egg in half lengthwise and remove the cooked yolks and place them in a bowl. Mash the yolks with a fork.
  2. Stir in mayonnaise, mustard, pickle juice, sugar, salt, and pepper. Stir until creamy. You may want to use a hand mixer to make it extra creamy.
  3. You can either spoon the creamy yolk mixture into the egg white or pipe it on the egg white by using a star tip and a pastry bag. An easy tip is to cut a corner of a small sandwich Ziploc bag, place the star tip through the hole, fill the bag with the creamy yolk mixture, and pipe it into the egg white shells.
  4. Sprinkle with paprika and top with crispy bacon, if so desired. Cover and chill until ready to serve.
