- 1/4 cup mayonnaise
- 1 1/2 teaspoon mustard (classic or dijon)
- 1 teaspoon pickle juice
- 1/2 teaspoon sugar
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- paprika pinch
Instructions
How to hard boil eggs:
- Place your eggs in a medium saucepan and cover with water. Bring the water to a boil over high heat.As soon as the water begins to boil, cover the saucepan, and remove it from heat.Let it sit, covered for 10-12 minutes.
- Meanwhile, fill a bowl with ice water to make an ice water bath. Transfer the hard boiled eggs with a slotted spoon or strainer to the water bath to stop the cooking process. Let sit in the water bath for 3-5 minutes and then peel.
Deviled Eggs:
- Cut each egg in half lengthwise and remove the cooked yolks and place them in a bowl. Mash the yolks with a fork.
- Stir in mayonnaise, mustard, pickle juice, sugar, salt, and pepper. Stir until creamy. You may want to use a hand mixer to make it extra creamy.
- You can either spoon the creamy yolk mixture into the egg white or pipe it on the egg white by using a star tip and a pastry bag. An easy tip is to cut a corner of a small sandwich Ziploc bag, place the star tip through the hole, fill the bag with the creamy yolk mixture, and pipe it into the egg white shells.
- Sprinkle with paprika and top with crispy bacon, if so desired. Cover and chill until ready to serve.
