Deviled Eggs with Bacon Recipe

Deviled Eggs with Bacon combine creamy seasoned egg yolks with crispy bacon and sautéed onions for a rich and savory filling. The addition of sharp cheddar cheese, apple cider vinegar, and Dijon mustard introduces layers of flavor with a tangy kick. Topped with green onions and smoked paprika, these deviled eggs offer a balanced texture between smooth filling and crispy bacon bits, making them a flavorful appetizer or snack.

Description

This recipe starts by hard boiling eggs and cooling them before peeling and halving. The yolks are mixed with crispy crumbled bacon, golden sautéed onions cooked in reserved bacon fat, sharp cheddar cheese, mayonnaise, apple cider vinegar, and Dijon mustard. This combination creates a creamy and flavorful filling with a pleasant tang and savory depth.

The egg whites hold the rich filling, and the deviled eggs are garnished with additional crumbled bacon, sliced green onions, and a sprinkle of paprika for color and mild smoky flavor. Texture contrasts between the smooth yolk mixture and bacon bits enhance the eating experience.

Deviled eggs work well as party appetizers or snack bites and can be prepared in advance and refrigerated until serving. Season to taste with salt and pepper for balanced flavor.

Ingredients

Servings
  • 6 large egg
  • 4 lices Bacon cooked crispy (reserve fat for cooking the onions)
  • ½ cup onion finely minced
  • 4 tablespoons mayonnaise
  • ¼ cup cheddar cheese finely grated
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • salt to taste, sea salt
  • black pepper to taste, sea salt
  • green onion to garnish, sliced
  • paprika to garnish, sliced

Instructions

  1. Place the eggs in a medium-sized pot and cover them with 2 inches of water. Bring the pot to a boil over high heat. Lower the heat and simmer for 8 minutes. Place the cooked eggs in a bowl with ice water and let them cool.
  2. While the eggs are simmering, cook the bacon and onions. In a medium-sized frying pan, cook the bacon over medium heat until it is crispy. Remove it from the pan and crumble it when it's cool enough to touch.
  3. Remove all but 1 tablespoon of bacon oil from the pan and add the onions. Cook the onions until they are golden brown, about 7 minutes.
  4. Peel the eggs and cut them in half lengthwise. Remove the yolks and put them into a mixing bowl. Add ¾ of the bacon, the onions, mayonnaise, cheese, apple cider vinegar, and mustard and mix well. Season to taste with salt and pepper.
  5. Spoon the yolks back into the egg whites then top with the reserved bacon, some green onions, and a little sprinkle of paprika.
