Dilis

Dilis are a Filipino delicacy consisting of anchovies, often dried, that are lightly battered before being deep-fried and served hot as an appetizer.

Ingredients

  • ½ lb dilis anchovies, dried
  • 2 tablespoons sugar
  • ½ cup white vinegar
  • 2 tablespoons hot sauce (e.g. Tabasco)
  • 1 cup cornstarch
  • 1 teaspoon salt (if dried anchovies are not already salted)
  • vegetable oil (for frying)

Instructions

  1. Combine the cornstarch, sugar and salt in a bowl.
  2. In a separate bowl, mix the vinegar and the hot sauce and coat the anchovies with this mixture.
  3. Then dip the anchovies in the mixture of cornstarch, sugar and salt.
  4. Deep-fry the anchovies over medium heat until golden and crisp.
  5. Drain on a plate lined with paper towel. Serve hot or warm.
