Dill Pickle Chicken Salad

Dill Pickle Chicken Salad combines tender cooked chicken with the bright, tangy crunch of chopped dill pickles and celery. Mixed with mayonnaise and seasoned with dill, garlic powder, and a touch of kosher salt, this salad balances creamy and crisp textures with a savory, slightly tart flavor. The addition of pickle juice enhances the tang, making it a refreshing option for sandwiches, croissants, or lettuce wraps.

Description

Dill Pickle Chicken Salad features diced or shredded chicken blended with finely chopped dill pickles, celery, and green onions for a mix of textures. Mayonnaise binds the ingredients, while fresh or dried dill and garlic powder lend aromatic seasoning. The recipe includes pickle juice to deepen the pickle’s tanginess, balanced by kosher salt for controlled seasoning. After combining all ingredients, letting the salad chill allows the flavors to meld and the salt to dissolve fully.

The salad offers a satisfying contrast between creamy and crunchy elements, with the distinctive dill pickle flavor providing a pleasant zip. It can be served on sliced bread or croissants, making it suitable for traditional sandwiches. For a lighter approach, serving it as lettuce wraps or alone works well, keeping the focus on the layered flavors and textures.

Chilling before serving helps integrate the flavors and ensures the salt is well distributed. Adjust salt and pepper after resting to suit your taste. The use of rotisserie chicken and simple mix-ins makes this salad approachable for home cooks.

Ingredients

Servings
  • 3 cups chicken diced or shredded (I like to use rotisserie chicken, cooked
  • 1 cup dill pickle finely chopped
  • 1/2 /2 cup mayonnaise
  • 1/2 /2 cup celery finely chopped
  • 1/3 /3 cup green onion sliced
  • 2 tablespoons pickle juice from the pickle jar
  • 1 tablespoon dill chopped fresh or 1 teaspoon dried
  • 1/2 /2 teaspoon garlic powder
  • 1/2 /2 teaspoon kosher salt (do not use table salt or it will be too salty...start with a little and and more to taste)

Instructions

  1. Add all the ingredients to a large bowl and combine well. The salt will need about 30 minutes to dissolve. Add more salt if needed and add pepper to taste. Chill in the fridge until ready to serve.
  2. Serve on sliced bread or croissants. For a low-carb version serve as lettuce wraps or all alone.
