Dinner in a Pumpkin Recipe

Ingredients

  • 1 medium pumpkin
  • 2 tablespoons vegetable oil
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 small yellow onion
  • 3 cloves garlic minced
  • 1 pound ground Italian sausage
  • 2 cups sliced cremini mushrooms
  • 1 (15 ounce) can cream of mushroom soup plus 1 can water
  • 1 cup cooked rice
  • salt and pepper to taste

Instructions

  1. Clean 1 medium pumpkin, cut the top off, and gut and scrape it clean. Leave the pumpkin meat intact, only remove the guts, save the top.
  2. Preheat oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper.
  3. Wash and dice the 1 red bell pepper, 1 green bell pepper, and 1 small yellow onion. In a large skillet, heat 2 tablespoons vegetable oil over medium-high heat.
  4. Add the diced peppers and onion to the skillet and saute for 3-5 minutes. Add the 1 pound ground Italian sausage and cook until the sausage is just browned.
  5. To the skillet, add 3 cloves garlic and 2 cups sliced cremini mushrooms and continue to saute everything together for another 3-5 minutes.
  6. Reduce the heat to medium-low and add 1 (15 ounce) can cream of mushroom soup and 1 can of water. Add 1 cup cooked rice and salt and pepper to taste.
  7. Stir until everything is well combined. Remove the filling from heat and fill the hollowed pumpkin with the filling.
  8. Place the top back on the pumpkin, place the filled pumpkin on the baking sheet, and bake for 45 minutes to an hour or until the meat of the pumpkin is fork tender and easily able to be scraped.
  9. Once the pumpkin has baked thoroughly, remove it from the oven and allow it to rest for 10 minutes.
  10. To serve, scoop out the filling along with some of the pumpkin meat and enjoy!
