Description

  • 1 tablespoon olive oil
  • 8 ounces ground beef lean
  • 8 ounces ground pork sausage
  • ½ cup chicken liver optional, minced
  • 1 medium onion diced
  • 1 green bell pepper diced
  • 1 cup celery diced
  • 3 cloves garlic minced
  • 1 ½ teaspoons Cajun seasoning
  • 1 ½ cups long grain white rice uncooked
  • 3 ½ cups chicken broth I use low sodium
  • 2 bay leaf
  • salt to taste
  • black pepper to taste
  • green onion for garnish

Instructions

  1. Heat olive oil over medium high heat in a dutch oven or heavy bottomed pan.
  2. Add beef, sausage and chicken liver (if using). Cook until no pink remains.
  3. Add onion, garlic, green pepper, celery and Cajun seasoning. Stir until softened, about 5 minutes.
  4. Add rice, broth and bay leaves. Bring to a boil, reduce heat and simmer covered about 20-23 minutes or until rice is cooked.
  5. Garnish with green onions and serve.

Notes

  • Freeze chicken livers for 20-30 minutes before mincing to ease chopping.
