Dirty Rice
Description
This recipe begins by browning ground beef, pork sausage, and optionally chicken liver in olive oil to build a robust, meaty base. Aromatic vegetables known as the 'holy trinity' of Cajun cooking—onion, bell pepper, and celery—along with garlic and Cajun seasoning are sautéed until tender, infusing the mixture with flavor. Then, uncooked white rice and chicken broth are added and simmered covered until the rice is fully cooked and fluffy.
The dish is seasoned to taste with salt and black pepper and often garnished with sliced green onions for fresh brightness. The inclusion of chicken liver introduces a traditional depth and earthiness characteristic of authentic versions but is optional based on availability and preference.
Dirty Rice is commonly served as a side dish accompanying meats or enjoyed as a main course. The recipe's method ensures well-cooked rice infused with rich meats and spices offering a savory, satisfying dish.
Freezing chicken liver briefly before mincing helps with easier preparation. Adjust seasoning according to taste preference.
