Divine One-Minute Salsa

This salsa blends red onion, fresh cilantro, pickled jalapeños, lime juice, garlic, salt, and diced tomatoes in a quick pulse using a food processor. The salsa is chunky rather than fully pureed, providing a fresh, bright, and mildly spicy accompaniment. Draining the tomatoes slightly before mixing avoids excess liquid and maintains a vibrant texture. It is ready to serve immediately and can be refrigerated briefly.

Description

The Divine One-Minute Salsa combines simple, fresh ingredients chopped quickly in a food processor or blender. Red onion, cilantro, pickled jalapeños, lime juice, garlic, and salt are first coarsely pulsed to avoid over-processing and preserve texture. Diced tomatoes are drained and added last with a few brief pulses to incorporate them without losing the salsa’s chunkiness. A short drain in a sieve removes excess liquid for better consistency.

This salsa offers a balance of herbaceous freshness from the cilantro, tang from lime juice, and moderate heat from the jalapeños and garlic. The chunky texture works well for scooping with chips or as a topping. The mix can be refrigerated for up to two days, though it is best fresh.

A suggested variation includes folding in diced avocado just before serving to add creaminess and richness, complementing the spicy and citrus elements of the salsa.

Ingredients

Servings
  • ½ small red onion peeled and quartered
  • ½ cup cilantro fresh leaves
  • ¼ cup pickled jalapeños drained, jarred
  • 2 tablespoons lime juice
  • 2 garlic peeled, cloves
  • ½ teaspoon salt
  • 1 (28-ounce) (28-ounce) can diced tomatoes drained

Instructions

  1. In the bowl of a food processor (or a blender), pulse the onion, cilantro, jalapenos, lime juice, garlic and salt until coarsely chopped.
  2. Add the drained tomatoes and pulse until combined. Don’t overprocess in this step if you want your salsa to remain chunky – just give it a few good 1-second pulses until everything is mixed.
  3. Place the salsa in a fine mesh strainer or sieve and drain briefly. Transfer to a bowl and serve. (The salsa can be refrigerated in an airtight container for up to 2 days.)

Notes

  • Mix diced avocado into the salsa just before serving for a creamy addition.
  • Do not overprocess to keep chunkiness; use brief pulses when adding ingredients.
  • Drain canned tomatoes before adding to reduce excess liquid and improve texture.
  • Refrigerate salsa in an airtight container for up to two days.
