Dolly Madison Double Chocolate Chip Mega Muffin

The Dolly Madison Double Chocolate Chip Mega Muffin recipe combines chocolate fudge cake mix and chocolate pudding mix to create rich, moist muffins studded with mini chocolate chips. Almond extract adds a subtle nutty aroma. The batter is mixed until smooth and baked into large or small muffins with a dense chocolate flavor and tender crumb.

Description

This muffin recipe uses a chocolate fudge cake mix as its base, enhanced with chocolate instant pudding mix to boost moisture and depth of chocolate flavor. Water, eggs, vegetable oil, and almond extract are combined with the dry ingredients to form a smooth batter. Adding frozen mini chocolate chips last ensures they don't melt prematurely, preserving bursts of chocolate throughout. Muffins are baked at 350°F and vary in baking time depending on size, aiming for fully set centers without overcooking.

The resulting muffins have a deep chocolate color with pockets of melted chocolate chips. Almond extract offers a delicate flavor contrast. These muffins can be made in a variety of sizes, from large no-crumb-left-behind mega muffins to smaller portions for sharing. This recipe offers a convenient way to make an indulgent chocolate baked good with boxed ingredients enhanced by pudding mix.

Ingredients

Servings
  • 1 package chocolate fudge cake mix
  • 1 package chocolate instant pudding mix 4 serving size
  • 3/4 cup water
  • 4 eggs beaten
  • 1/2 cup vegetable oil
  • 1 cup mini chocolate chips keep them frozen
  • 1/4 teaspoon almond extract

Instructions

  1. Mix cake mix, pudding, water, eggs, oil, and almond extract until smooth. Stir in chocolate chips last, blend through. Fill muffin cups 3/4 full and bake in preheated oven at 350 degrees between 25-35 minutes until done, but do not over cook. This will depend on the size of the muffin cups. I like to make six very large muffins and 12 smaller ones for the timid.
