Description

Don Pablo’s Tortilla Soup starts with simmering chicken breasts in water alongside carrots, celery, onion, garlic, and a blend of salts and peppers to create a deeply flavored broth. After removing the chicken, the broth is enhanced with Rotel tomatoes, cilantro, corn, and cumin. Shredded chicken is returned to the pot and cream is stirred in to add richness and body.

Tortilla strips fried in peanut oil provide a crunchy base in the serving bowls, topped with shredded Monterey Jack cheese before ladling over the hearty soup. The result is a soup that balances wholesome ingredients with contrasting textures and a mildly spiced, creamy broth.

Ingredients

  • 1 1/2 pounds chicken breast split
  • 1 gallon water
  • 3 carrot 1/4-inch slice
  • 3 celery 1/4-inch slice, stalks
  • 1/2 cup onion chopped
  • 2 tablespoons garlic chopped
  • 4 teaspoons salt
  • 1 teaspoon white pepper
  • 1 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon cumin
  • 1/4 cup cilantro chopped
  • 1 Can Rotel tomatoes mild
  • 1/2 Pint heavy whipping cream
  • 1/2 Can corn
  • 36 corn tortillas
  • 12 Ounces Monterey jack cheese shredded

Instructions

  1. Boil chicken, carrots, celery, onion, garlic, salt and peppers in water for about 1-2 hours. Remove chicken and let cool. Add Rotel, cilantro, corn, and cumin to the pot. Stir well. Remove chicken from the bone and add to the pot. Add cream just to get 
  2. color and thickness. Cut tortillas in strips and fry in peanut oil. Put tortillas in bottom of bowl, sprinkle with cheese and pour soup on top. Yield: 12 servings Enjoy!
