Description
This recipe starts with a homemade French dressing blending sugar, ketchup, light olive oil, white vinegar, celery seed, chili powder, onion powder, paprika, and salt, processed until smooth and stored chilled until use. The ground beef is cooked, drained, and simmered with taco seasoning and water to develop flavor without greasiness. A combination of shredded lettuce, halved grape tomatoes, and sliced bell peppers forms the fresh vegetable base.
Before serving, shredded cheddar cheese and the seasoned beef are added and tossed with the vegetables. Just prior to serving, crushed Nacho Cheese Doritos and French dressing are mixed in to preserve chip crunch and coating freshness. This salad balances savory, sweet, and tangy elements with textural contrasts between soft and crunchy.
It yields about 12 servings for a light meal or substantial side. The salad is best eaten the day it is prepared as the dressing will soften the greens and chips over time.
The French dressing can be prepared up to 3 days ahead and stored refrigerated. Taco seasoning can be homemade or store-bought, and optional substitution of chip varieties allows some customization.
Ingredients
For the French dressing:
- 1/2 cup granulated sugar or less to taste (see note 1)
- 1/3 cup ketchup
- 1/4 cup olive oil see note 2, light
- 1/4 cup white vinegar
- 1/4 teaspoon celery seed
- 1/4 teaspoon chili powder
- 1/4 teaspoon onion powder
- 1/8 teaspoon paprika (see note 3)

For the salad:
- 1 pound ground beef (see note 4)
- 2 tablespoons taco seasoning homemade or store-bought (see note 5)
- 1/4 cup water
- 1 head lettuce shredded (see note 6)
- 1 pint grape tomatoes halved
- 1 bell pepper sliced or chopped
- 2 cups cheddar cheese shredded
- 1/2 bag Nacho Cheese Doritos crushed
Instructions
To make the French dressing:
- In a food processor or blender, add sugar, ketchup, olive oil, white vinegar, celery seed, chili powder, onion powder, paprika, and salt to taste (I like 1 teaspoon). Process until smooth. Store covered in the refrigerator until serving time, up to 4 days in advance.
To make the salad:
- In a medium skillet over medium-high heat, cook ground beef until browned, about 5 minutes. Drain well. Stir in taco seasoning and water and simmer until thickened, about 2-3 minutes. Remove from heat.
- In a large bowl, add lettuce, tomatoes, bell pepper, cheese and beef mixture. Toss to combine. Right before serving, add Doritos and salad dressing and toss to combine.
Notes
- Adjust sugar in the dressing to personal taste; start lower if you prefer less sweetness.
- Use light olive oil for a milder flavor that allows other dressing spices to stand out.
- Drain cooked ground beef well to reduce excess grease before mixing with taco seasoning.
- Prepare French dressing up to 3 days ahead and keep refrigerated to blend flavors.
- The salad is best served immediately after adding Doritos to maintain crunch; leftovers will lose chip texture.
