Double Beef Chili

Double Beef Chili features two types of beef—ground and stew meat—slow-simmered with onions, garlic, jalapeño, and beans in a spiced tomato base enriched with beer or beef stock. The combination creates a rich, hearty chili with complex textures from both beef cuts and beans. The slow simmer melds the flavors while tenderizing the meats, resulting in a thick, deeply savory dish suitable as a main course.

Description

In this Double Beef Chili, ground beef and stew meat are browned separately to develop flavor and texture. Aromatics including diced onion, garlic, jalapeño, and green pepper are cooked until soft, then combined with the meats. The addition of spices, tomato sauce, diced tomatoes, and two kinds of beans—pinto and navy—creates a robust chili base. Beer or beef stock adds depth and richness.

The chili simmers covered on low heat for an hour, allowing the meats to become tender and the flavors to meld thoroughly. The result is a hearty chili with contrasting textures from the ground beef's fine crumble and the stew meat's chew. The inclusion of jalapeño and chili powder offers a moderate spicy warmth balanced by the acidity of tomatoes.

This chili can be served alone or topped with shredded cheese, green onions, sour cream, and corn chips or fritos for extra flavor and texture contrast. It is substantial enough to serve as a filling meal and well suited for colder weather or gatherings.
