Double Chocolate Brownie Baked Oatmeal
Description
This baked oatmeal recipe incorporates old-fashioned oats with cocoa powder and vanilla protein powder to produce a flavorful chocolate base. Baking powder provides lift while egg whites, milk, unsweetened applesauce, and maple syrup add moisture and sweetness. Mini chocolate chips are folded into the mixture for bursts of melted chocolate throughout. The mixture is baked in a 13"x9" pan until set and lightly firm, yielding a dish with the chewiness of oatmeal and the rich flavor of a chocolate brownie.
After baking, additional chocolate chips are melted with a little milk and piped over the top to create a glossy chocolate drizzle. The dish divides into six servings, making it convenient for meal prep or family breakfasts. It offers a chocolate-forward alternative to traditional baked oatmeal with added protein.
This oatmeal can be served warm or at room temperature and suits a breakfast or snack when a chocolate treat is desired without traditional baked goods.
