Double Mustard and Garlic Sauce
Description
Double Mustard and Garlic Sauce starts with melted salted butter, which forms the base of this richly flavored sauce. Fresh crushed garlic and chopped chives add aromatic sharpness and a subtle herbal note. The distinctive aspect is the use of both Dijon and French mustard, contributing complementary but different mustard flavors that deepen the taste profile. The sauce requires vigorous whisking after combining the ingredients to overcome the initial separation and develop a thick, creamy consistency. Using a microwave-safe jug for melting the butter and then whisking in the flavor components makes the preparation straightforward.
Because of its bold mustard and garlic flavor, this sauce pairs well as an accompaniment to grilled or roasted meats and vegetables. It can also be drizzled over sandwiches or used as a flavorful dip. The fresh chives offer a slight mild onion flavor, balancing the pungent garlic and mustard.
To crush the garlic effectively, the core should be removed to avoid bitterness. Melting butter in short bursts in the microwave and covering the jug with a kitchen towel helps prevent splatters. Continued whisking for 2 to 3 minutes is essential to achieve the creamy texture, transforming the initially split-looking mixture into a smooth sauce.
Ingredients
- 150 g butter salted
- 1 garlic crushed (see notes, clove
- ¾ tablespoon chives fresh, finely chopped
- 2 teaspoon Dijon mustard (see notes)
- 2 teaspoon mustard see notes, French
Instructions
- Place the butter in a microwave safe jug, microwave for 50 to 60 seconds or until melted (see notes)
- Add garlic, chives, dijon mustard and french mustard then whisk with a fork for about 2 - 3 mins until sauce is thick and creamy (see notes)
Notes
- Remove the garlic clove core before crushing to avoid bitterness in the sauce.
- Whisk the sauce continuously for 2 to 3 minutes until it thickens and becomes creamy despite initial separation.
- Microwave butter in a covered jug to prevent splatters and allow easy pouring.
- Using both Dijon and French mustards creates a fuller flavor profile in the sauce.
- French mustard can sometimes be harder to find; check local supermarkets like IGA.
