Dreamy Vegan Cauliflower Alfredo Sauce Recipe

This vegan cauliflower Alfredo sauce uses steamed cauliflower blended with onion, garlic, vegetable stock, and seasonings to create a creamy and rich sauce. Nutritional yeast adds depth and a slight cheese-like flavor, making it a dairy-free alternative to traditional Alfredo. The sauce works well poured over pasta or as a base for other dishes.

Description

The Dreamy Vegan Cauliflower Alfredo Sauce begins by sautéing onion and garlic until soft, then steaming chopped cauliflower in vegetable stock or water until tender. The cooked mixture is blended until smooth, ensuring a creamy base. Nutritional yeast contributes a savory, cheese-like essence without dairy, while lemon juice adds brightness. Optional vegan or regular butter enhances richness.

The sauce has a smooth texture with mild sweetness from cauliflower and depth from yeast and seasonings. It offers a plant-based alternative to Alfredo sauce without heavy cream or cheese. The method highlights vegetable steaming and blending for creamy consistency without added dairy fats.

This sauce pairs well with various pasta types and can be kept warm for serving. Adjust seasoning with additional salt or yeast to personal taste, and add stock or water if too thick.

Nutritional yeast is essential for flavor and can be found in health food stores or online. If the sauce becomes too thick after steaming, thinning with extra stock or water produces the desired consistency.

Ingredients

Servings
  • 1 teaspoon olive oil
  • ½ yellow onion chopped
  • 3 cloves garlic crushed
  • 3 cups cauliflower chopped, 12 ounces
  • 1 cup vegetable stock or water
  • 1-2 tablespoons nutritional yeast see notes
  • 2 teaspoons lemon juice
  • 1-2 teaspoons salt sea salt
  • ½ teaspoon soy sauce gluten-free or coco aminos, as needed
  • butter vegan or regular butter both work, use what you have on hand, optional, 1 tablespoon

Instructions

  1. Heat the oil in a medium-sized pot over medium-high heat. Add the onion and let it cook for 3-4 minutes, or until it is soft and translucent. Add the garlic and cook for 30 seconds. Add the cauliflower and the vegetable stock or water to the pot, cover with a lid and let the cauliflower steam for 5 minutes, or until it is soft.
  2. Transfer everything in the pot to a blender (a high-powered blender will make the smoothest sauce, but any blender will work) and blend on high until smooth. Add the remaining ingredients (starting with 1 tablespoon of nutritional yeast and 1 teaspoon of sea salt) and blend again. Taste and add more nutritional yeast and sea salt, if you'd like. If you are using the optional butter add it now and blend once more.
  3. Either use the cauliflower alfredo right away or pour it into a pan to keep warm until you are ready to use it.

Notes

  • Nutritional yeast provides the key savory flavor and can be found in many grocery or health food stores.
  • If the sauce is too thick after blending, simply add a little extra vegetable stock or water to achieve the right consistency.
  • Use vegan or regular butter based on preference or availability; both work well in this sauce.
