Drunken Cranberry Sauce

Drunken Cranberry Sauce features fresh whole cranberries simmered with brown sugar, orange juice, and a pinch of salt to develop a thickened, tangy-sweet condiment. The addition of spiced rum is cooked off to impart a subtle depth without alcohol heat. This sauce can be served warm or cold, ideal as a vibrant, fruity accompaniment to holiday meals.

Description

This sauce starts by simmering fresh cranberries with orange juice, brown sugar, and a pinch of kosher salt until the berries burst and the mixture thickens, yielding a bright and glossy texture. Dark or light brown sugar adds rich sweetness, balanced by the tartness of cranberries. A splash of spiced rum is stirred in near the end and cooked until evaporated, enhancing flavor complexity without retaining alcohol potency.

The final sauce is versatile, served warm to highlight its aroma and softness or chilled as a cold side. It complements traditional holiday dishes, especially poultry and pork, adding fruity brightness and gentle spice notes from the rum.

For storage, once cooled, the cranberry sauce should be wrapped tightly and refrigerated. It will keep for up to four days and can be served straight from the fridge or gently warmed if preferred. Adjusting the sugar quantity to ¾ cup can create a tarter variant.

Ingredients

Servings
  • 12 oz. cranberries whole, fresh
  • 1 oz. spiced rum
  • ½ cup orange juice
  • 1 cup brown sugar dark brown or light brown OK
  • salt kosher salt; a pinch

Instructions

  1. In a saucepan, combine the cranberries with the orange juice and brown sugar. Add a pinch of salt.
  2. Heat over medium heat, and cook, for about 10 minutes, or until cranberries have popped and the sauce has thickened.
  3. Pour in the rum, and stir, cooking until it has evaporated. This should take 2-3 minutes, depending on how hot the sauce is.
  4. Serve warm or cold as a side dish at the holiday table.

Notes

  • Reducing brown sugar to ¾ cup yields a tarter cranberry sauce with less sweetness.
  • After cooking, cool the sauce completely before wrapping and refrigerating up to 4 days.
  • Serve the sauce warm or cold depending on preference and dish pairing.
