Dungeness Crab
Description
This recipe prepares a whole Dungeness crab by first crushing black peppercorns and mixing them with room-temperature unsalted butter and salt. The live crab is humanely killed by stabbing near the abdomen, then rinsed and dried before coating it evenly with the pepper butter mixture.
Roasting in a 350°F oven for 30 minutes cooks the crab thoroughly while allowing the seasoned butter to infuse the meat and shell. The pepper provides a pronounced but balanced spice that pairs well with the natural sweetness of Dungeness crab. Serving with lemon wedges adds an acidic contrast to the rich butter flavor.
Remove from the oven and garnish with chopped parsley or lemon wedges as desired. This straightforward method emphasizes the crab's fresh flavor with simple seasoning and roasting.
Ingredients
- 1 tablespoon black peppercorns
- 6 tablespoons butter room temperature, unsalted
- 1/2 teaspoon salt
- 1 Dungeness crab
- lemon wedges
Instructions
- Preheat the oven to 350°F (176°C). Using the flat side of a knife, press down to smash the black peppercorns and chop them roughly. Heat the butter in the microwave, then add the crushed black pepper and salt. Stir to mix well.
- To kill a live Dungeness crab, stab it in the middle of the body, just above its abdominal area. Let it sit for 10 minutes to allow all the murky dark water inside the crab to drain out. Rinse the crab and pat it dry with water.
- Coat the crab with the black pepper butter mixture and roast in the oven for 30 minutes. Remove from the oven, garnish with parsley and lemon wedges, and serve immediately.
