Description

This Dungeness Crab Salad features sweet crabmeat layered with diced firm fuyu persimmon, creamy avocado, and bright pomegranate arils for a mix of textures and flavors. The salad is marinated briefly in lemon or lime juice combined with thinly sliced shallots, creating a flavorful base that enhances the sweetness of the crab and fruit. Olive oil and minced parsley finish the dressing, offering a subtle herbaceous note.

The salad has a balance between sweet fruit, rich crab protein, and tangy citrus, all gently combined to avoid breaking up the crab meat. It can be served on its own or as a topping for hot corn tortillas, crackers, or tortilla chips, offering flexible serving options.

Ingredients

Servings
  • 3 or 4 lemon or limes
  • 1 shallot peeled and sliced very thin
  • salt freshly ground
  • black pepper freshly ground
  • 1 persimmon firm fuyu, peeled and diced
  • 2 avocado skinned and diced
  • 1/2 cup pomegranate arils about 1/4 of a pomegranate
  • 3/4 pound crabmeat
  • 2 tablespoons parsley minced
  • 3 to 4 tablespoons olive oil (use the good stuff)

Instructions

  1. Zest one or two of the lemons with a fine grater. I use a microplane. Put the zest into a large bowl. Juice all the citrus into the bowl and add the sliced shallot. Let this marinate while you cut everything else. 
  2. Add the remaining ingredients to the bowl and gently mix to combine. Serve as-is, or in hot corn tortillas, or on crackers or tortilla chips. 

Notes

  • Substitute Dungeness crab with blue, rock, red, or snow crab if desired.
