Easy 10-min. Korean Spinach Side Dish (Sigeumchi Namul)
Description
Sigeumchi Namul is a simple Korean side dish made by blanching fresh spinach briefly in salted boiling water, then shocking it in cold water to halt cooking and preserve color. After draining and squeezing the spinach to remove moisture, it is chopped into bite-size pieces. The spinach is then mixed with a sauce of soy sauce, sesame oil, toasted sesame seeds, minced garlic, and a touch of sugar to balance the savory and nutty notes.
The dish provides a fresh texture where the spinach is tender yet not mushy, with the aromatic dressing coating each leaf. It is a quick-cooked vegetable dish that brings brightness and an umami dimension from the soy and sesame components. This side dish pairs well with rice, grilled meats, or other Korean-style meals.
