Easy 3-ingredient Sambal Aioli (Sambal Mayo)
Description
The recipe combines minced garlic, white rice vinegar, and sambal with mayonnaise to create a creamy sauce with bright acidity and balanced spiciness. This sambal aioli pairs exceptionally well with savory dishes such as cut-up hard-boiled eggs, canned tuna, grilled corn, or chicken salad. It also serves as a flavorful dip for roasted sweet potato fries, adding a spicy contrast to the sweet, roasted vegetable. The recipe includes details on roasting sweet potatoes evenly to ensure crispness.
The sauce stores well refrigerated for up to five days in an airtight container, though shorter storage is advised if using homemade mayonnaise. Its ease and flavor make it practical as a spicy condiment to enhance a variety of meals.
Ingredients
- 2 Tablespoon mayonnaise I like Japanese Kewpie Mayonnaise as it's the most savory. Substitute: regular or homemade mayonnaise. See post above for how to make your own mayonnaise.
- 1 Tablespoon sambal belacan I use either sambal belacan tumis or raw sambal Oelek. An alternative is sambal oelek or sriracha, or sambal oelek
- ½ Tablespoon white rice vinegar Substitute: white wine vinegar, lime juice or lemon juice
- 3 cloves garlic peel and mince. Can omit if using garlic mayo as a base. (See post above for how to make homemade garlic mayo.)
- salt Taste before adding as store bought sambal is usually salted, to taste, optional
- spring onion Optional garnish, slice finely
Instructions
- Mix the garlic, vinegar, sambal and mayo together. Taste to see if it needs a pinch of salt then top with spring onions, if using.

- Store for up to 5 days in the fridge in an air-tight container. If using homemade mayonnaise, I recommend using the sambal mayonnaise sauce within 2-3 days.
Notes
- Pair the sambal aioli with cut hard-boiled eggs, canned tuna, grilled corn, or chicken salad for added flavor.
- For sweet potato fries, cut into thick 1cm strips, toss with olive oil and salt, and roast at 425°F (218°C) turning halfway for even crispness.
- Store sambal aioli in an airtight container in the fridge for up to 5 days; use within 2-3 days if made with homemade mayonnaise.
