Easy 30 minute Posole
Description
Easy 30 minute Posole begins by sweating diced yellow onion in oil, then whisking in flour and chili powder to form a flavorful base. Tomato paste and spices including cumin, garlic powder, cayenne, and salt dissolve into water and chicken broth to create a thickened, vibrant broth. Shredded pork, canned hominy, and diced green chiles are added to heat through, blending hearty components with the seasoned broth.
The resulting stew offers tender chunks of pork, the slightly chewy texture of hominy, and a mild chili flavor with accents of bright lime juice and fresh cilantro added at serving. This combination creates a balance of warmth, acidity, and earthy corn flavor suited for a comforting meal.
The recipe calls for a mild chili powder blend without added salt and suggests using Better Than Bouillon for broth flavor. Lime wedges and cilantro enhance freshness and can be customized to taste. With ingredients mostly canned or pre-cooked, this posole fits well into a quick weeknight cooking routine.
Ingredients
- 1 yellow onion $0.14
- 2 Tbsp neutral cooking oil $0.04, generic cooking oil
- 2 Tbsp flour $0.02
- 2 Tbsp chili powder $0.30, mild
- 3 oz. tomato paste $0.33
- 1/2 tsp cumin $0.05, ground
- 1/2 tsp garlic powder $0.05
- 1/4 tsp cayenne pepper $0.03, optional
- 3/4 tsp salt $0.03
- 2 cups water $0.00
- 3 cups chicken broth $0.38
- 1 oz. can green chiles $0.87, chopped
- 1 oz. can hominy $1.09
- 1.5 cups pork $2.04, shredded, or chicken or beef, pre-cooked
- 1 lime $0.33, fresh
- 1/2 bunch cilantro $0.85, fresh
Instructions
- Finely dice the onion, then add it to a large soup pot along with the cooking oil. Sauté the onion in the oil over medium heat for 3-5 minutes, or until it is tender and transparent. Add the flour and chili powder and continue to sauté for two minutes more. The mixture will be fairly dry, so stir continuously to prevent burning.
- Add 2 cups water, tomato paste, cumin, garlic powder, cayenne pepper, and salt to the pot. Whisk the ingredients together until the tomato paste is dissolved. Allow the mixture to come to a simmer, at which point it will thicken.
- Finally, add the chicken broth, shredded meat, diced chiles, and hominy (drained). Stir to combine and then heat through (about 10 minutes).
- Cut the lime into wedges and roughly chop the cilantro. Top each bowl with chopped cilantro and a wedge of lime to squeeze over top.
Notes
- Use a mild chili powder blend without salt to control seasoning effectively.
- Better Than Bouillon can be used to prepare the chicken broth for richer flavor.
- Serve with fresh lime wedges and chopped cilantro for added brightness.
