Easy 5 Minute Asian Cucumber Salad

This Asian Cucumber Salad offers thinly sliced cucumbers tossed in a quickly made dressing of rice vinegar, soy sauce, sesame oil, garlic, sugar, and chili flakes. Finished with fresh cilantro, toasted sesame seeds, and crushed peanuts, it combines crisp, cool cucumber with tangy, savory, and mildly spicy flavors in just minutes.

Description

The recipe starts with thin rounds of young, thin-skinned cucumbers which can be peeled if preferred. A dressing is whisked together from minced garlic, rice vinegar, sesame oil, soy sauce, cane sugar, salt, and red chili flakes, providing a balance of acidity, sweetness, umami, and subtle heat.

The cucumbers are tossed in this dressing to ensure even coverage. Finally, the salad is topped with finely chopped fresh coriander (cilantro), roasted crushed peanuts, and toasted sesame seeds, adding fresh herbaceous notes and textural contrast with the nuts and seeds.

The result is a crisp, refreshing salad that's ideal as a quick side dish in Asian-inspired meals. Its simple ingredients and fast preparation make it a practical choice when fresh cucumbers are in season or when a light, tangy complement is desired.
