Easy 5-Minute Zucchini Parmesan
Description
The recipe uses medium-thick slices of zucchini that are quickly cooked until just tender using either a microwave or stovetop steaming method. After cooking, the zucchini is drained and combined with chunks of butter which melts over the warm slices, enhancing their natural sweetness and moisture.
The addition of freshly grated Parmesan, kosher salt, and freshly ground black pepper adds a savory dimension, balancing the butter’s richness. The zucchini remains soft but maintains a slight bite due to the short cooking time, preserving its fresh flavor and texture.
This dish works well as a simple, mild vegetable side alongside a variety of meals, especially when fresh summer squash is in season. It is best served immediately while still hot to enjoy the full flavor and creamy texture from the melted butter and cheese.
