Ingredients
- 1 round pie dough crust (approximately 13 inches/33cm)
- 2 small apples (peeled, cored and chopped)
- 1 teaspoon lemon juice
- 1 tablespoon brown sugar
- ½ teaspoon cinnamon
- 2-3 tablespoons apricot jam
VANILLA GLAZE (optional)
- 1 cup powdered sugar
- ½-1 teaspoon vanilla extract
- 1-2 tablespoons cream any type or whole milk
Instructions
- Pre-heat oven to 350F (180C). Line a baking sheet with parchment paper.
- Roll out the pie crust, spread the jam on the circle, then cut into 8 triangles.
- In a medium bowl add the peeled and chopped apples sprinkle with the lemon juice, then add the sugar and cinnamon, stir to combine.
- On the large part of the triangle place a tablespoon of apple mixture. Fold the ends on both sides over the apple mixture and tightly roll up. This way the mixture should stay in the pastry and not escape.
- Place the roll ups on a parchment paper lined baking sheet. Brush with a little milk and bake until golden brown, approximately 20 minutes. Dust with powdered sugar before serving. Or drizzle with a simple vanilla glaze.
SIMPLE VANILLA GLAZE
- In a small bowl whisk together the powdered sugar, vanilla and starting with a tablespoon cream. Mix together until smooth. You can add more or less powdered sugar depending on the amount you need or the thickness you want.
Notes
- For the apples, I personally always reach for Royal Galla or Fuji, but you could also use Cortland, Granny Smith apples, Crispin, Northern Spy, Newton Pippin, Rome Beauty, Winesap, Honeycrisp, McIntosh or Braeburn or even Empire apples.
- If you like you could add some finely chopped nuts such as walnuts, pecans or even almonds. Instead of the cinnamon you could add a 1/2 teaspoon of apple pie spice.
- For store bought dough you could use a regular short crust, or crescent dough, crescent roll dough or even homemade, such as this easy homemade pie dough or this brown sugar pie dough. If you wanted you could even use Puff pastry, store bought or Homemade Puff Pastry.
- Any leftovers should be placed in an airtight container and stored in the refrigerator. They will keep for up to 2-3 days in the fridge. Before serving bring to room temperature or re-heat in the oven or microwave.
- Place the completely cooled crescent rolls on a parchment paper lined baking sheet and freeze until firm, 1-2 hours, then place them in a freezer bag or container. They will keep for up to 4 weeks in the freezer.
