Easy Arugula Salad

This Easy Arugula Salad combines peppery arugula with cherry tomatoes, shaved Parmesan, slivered red onion, and toasted pine nuts, dressed with a tangy lemon vinaigrette made from red wine vinegar, fresh lemon juice, Dijon mustard, and vegetable oil. The combination offers fresh, crisp textures paired with nutty and sharp cheese notes, balanced by a bright acidic dressing.

Description

Easy Arugula Salad brings together delicate peppery greens with bright cherry tomatoes and the creamy texture of shaved Parmesan, adding subtle crunch from slivered red onion and toasted pine nuts. The lemon vinaigrette dressing is prepared by whisking red wine vinegar, lemon juice, mustard, and sugar before gradually incorporating vegetable oil, creating a balanced dressing with acidity and mild sweetness. Tossed just before serving, the salad maintains freshness and vibrant textures. This salad works well as a light meal or side dish, providing varied textures and flavors from its simple components.

The salad notes suggest making Parmesan petals by shaving the cheese with a vegetable peeler for texture and presentation. Spinach can be included to soften the arugula's bite. Store-bought dressings with a sweet tangy profile may substitute the homemade vinaigrette if desired.

Ingredients

Servings
  • 6 cups arugula washed & dried
  • 1 cup cherry tomato
  • 1 ounce Parmesan Cheese shaved with a vegetable peeler, see notes
  • ¼ cup red onion slivered
  • 1 tablespoon pine nuts toasted, or toasted almonds

Lemon Vinaigrette

  • ¼ cup vegetable oil
  • 1 ½ tablespoon red wine vinegar
  • 1 tablespoon lemon juice fresh
  • 1 teaspoon Dijon mustard
  • ½ teaspoon granulated sugar or to taste

Instructions

  1. Whisk all dressing ingredients except the oil in a medium bowl.
  2. Slowly drizzle oil into the mixture while whisking. Season to taste with salt & pepper.
  3. Place arugula in a large salad bowl and toss with dressing. Add remaining ingredients on top.
  4. Serve immediately.

Notes

  • Use a vegetable peeler to create thin Parmesan cheese shavings for texture and visual appeal.
  • Incorporate spinach with arugula to reduce the peppery intensity if preferred.
  • Store-bought dressings can replace the vinaigrette; opt for those with a slightly sweet and tangy flavor like honey mustard or poppy seed.
