Easy Avocado Chicken Sandwich

This Avocado Chicken Sandwich is everything you need for a healthy lunch. It's creamy, full of flavors, and tastes like your next favorite meal.

Ingredients

  • 2 tablespoons hummus
  • 2 slices thick rustic bread like a sourdough boule or loaf
  • ½ avocado peeled and pitted
  • 1 slice havarti cheese
  • 3 ounces roasted chicken or deli chicken sliced
  • butter for grilling

Instructions

  1. Spread the hummus over both slices of bread and place them onto a flat surface. 
  2. Mash the avocado with a fork and spread over each slice. 
  3. Top one slice with cheese and roasted chicken. Assemble the sandwiches and butter on both sides. 
  4. Heat a non-stick pan over medium-high heat. Grill the sandwich for 2 to 3 minutes until the cheese begins to melt. Flip and grill for an additional minute until the cheese melts. 
  5. Remove from heat and cut in half before serving.
