Description
In this recipe, chopped bacon is cooked until crisp to render flavorful fat, which is used to sauté onions and mixed vegetables like peas and carrots. Eggs are scrambled in the pan and combined with the vegetables, then leftover cooked white rice and bacon are stirred in to absorb the seasonings.

Ingredients
- 8 ounces Bacon chopped
- 1 cup onion about 1 small onion, white, chopped
- 1 cup pea frozen
- 1 cup carrot frozen
- 3 egg lightly beaten
- 3 cups white rice cooked
- 2 teaspoons sesame oil
- 2-3 tablespoons soy sauce more to taste
- green onion for garnish, chopped
Instructions
- Add 8 ounces chopped bacon to a medium skillet or work. Cook over medium-high heat until the bacon is crisp, then remove with a slotted spoon and drain the grease, leaving about 1 tablespoon in the skillet.
- Add 1 cup chopped white onion and 1 cup frozen peas and carrots to the skillet and cook over medium-high heat for 2-3 minutes until the onion is tender and translucent.
- Slide the veggies to one side of the skillet, then add 3 lightly beaten eggs to the other side. Scramble the eggs until they are cooked through, and combine them with the veggies.
- Add 3 cups cooked white rice and the reserved bacon to the skillet and combine them with the eggs and veggies. Add 2 teaspoons sesame oil and 2-3 tablespoons soy sauce, adding more to taste if you would like.
- Stir until everything is heated through. Garnish with chopped green onions and serve warm.
