Easy Bacon Hasselback Chicken

Bacon Hasselback Chicken tastes so good!  The bacon, onions and cheese go beautifully with the chicken!  This dish is definitely worth a try, at least once!

Ingredients

  • 4 chicken breast boneless, skinless
  • 10 - 12 Bacon slices, par cooked
  • 2 cups cheese shredded, any variety, more or less to taste
  • ½ cup butter or 1 stick (optional, or garlic butter, cubed
  • 1 cup red onion or ¼ cup for each chicken breast (optional, or yellow onion, small, diced
  • salt to taste
  • black pepper to taste
  • ½ teaspoon paprika approximately

Instructions

  1. Preheat oven to 400 degrees. Prepare a rimmed baking sheet with tinfoil and a rack lightly coated with cooking spray. Set aside. 
  2. Par cook the bacon slices or cook them halfway. Place on paper towel.  Once cool enough to handle cut each slice into four pieces. Set aside.  
  3. Cut slits into the chicken breasts, about ½ inch apart and ¾ of the way through the chicken. As deep as you can cut without cutting all the way through. The depth of the cuts don't have to be exactly the same, just as close as possible. Place on your prepared baking sheet. 
  4. Sprinkle chicken with salt, ground black pepper and paprika. Place two or three of the half cooked bacon pieces inside each slit or cut with a pinch of diced onion (if using) and a cube of butter (if using). Bake for 30 minutes or until chicken is cooked through. 
  5. Remove from oven and add shredded cheese to the top of each chicken breast. Turn oven up to broil. Return chicken to oven until cheese is melted and nicely browned. Enjoy!
