Easy Bacon Wrapped Green Bean Bundles

These bacon wrapped green bean bundles combine fresh green beans with savory bacon and a tangy mustard vinaigrette for a roasted side dish. The fresh green beans maintain a tender-crisp texture, while the bacon adds a salty, smoky flavor. The mustard vinaigrette brightens the dish with acidity and garlic, making this an inviting way to serve green beans alongside a variety of meals.

Description

Easy Bacon Wrapped Green Bean Bundles feature fresh green beans trimmed and bundled into portions, each wrapped tightly with half strips of thick-cut bacon. The bundles are drizzled with a mustard vinaigrette made from olive oil, red wine vinegar, Dijon mustard, garlic, sugar, and salt, which imparts a lively and slightly tangy glaze. Roasting the bundles first at a moderate temperature ensures the green beans become tender while the bacon begins to crisp, followed by a higher heat phase to finish cooking and crisp the bacon fully. Sliced onions on top add additional sweetness and aroma.

The result is a combination of textures—the crisp-tender beans, the caramelized onions, and the crispy edges of bacon all complement each other. The seasoning with fresh cracked black pepper finishes the flavor with mild heat and depth.

This preparation works well as a flavorful vegetable side for dinners, especially those featuring grilled meats or roasted poultry. It’s a good choice when you want a vegetable dish with extra savory points from bacon and a touch of acidity to balance the richness.

Ingredients

Servings
  • 1 1/2 lb. Green bean trimmed, fresh
  • 12 ounce Bacon cut in half, thick sliced
  • 1 onion sliced
  • black pepper fresh ground

Mustard Vinaigrette

  • 4 tablespoons extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon Dijon mustard grainy
  • 4 cloves garlic minced
  • ½ teaspoon granulated sugar
  • ¼ teaspoon kosher salt

Instructions

  1. Wash the fresh green beans in a colander under cool water. Trim the ends of the beans with a sharp knife.
  2. Whisk the vinaigrette ingredients together in a small bowl; olive oil, red wine vinegar, mustard, garlic, sugar and salt until incorporated.
  3. Slice the bacon in half. Place a handful of green beans (8-10) in the center of a strip of bacon. Roll into little bundles and place in a 9" x 13" baking pan or baking sheet with the seam side down.
  4. Add the onion slices on top of the green bean bundles and drizzle the mustard vinaigrette on top of the bundles (save a little of baste after cooked). Season with pepper.
  5. Roast for 30 minutes at 350°F degree oven, then turn up the heat to 425°F and cook for an addition 15 minutes or until the bacon is cooked.
