Ingredients
- 1 1/2 lb. Green bean trimmed, fresh
- 12 ounce Bacon cut in half, thick sliced
- 1 onion sliced
- black pepper fresh ground
Mustard Vinaigrette
- 4 tablespoons extra virgin olive oil
- 2 tablespoons red wine vinegar
- 1 tablespoon Dijon mustard grainy
- 4 cloves garlic minced
- ½ teaspoon granulated sugar
- ¼ teaspoon kosher salt
Instructions
- Wash the fresh green beans in a colander under cool water. Trim the ends of the beans with a sharp knife.
- Whisk the vinaigrette ingredients together in a small bowl; olive oil, red wine vinegar, mustard, garlic, sugar and salt until incorporated.
- Slice the bacon in half. Place a handful of green beans (8-10) in the center of a strip of bacon. Roll into little bundles and place in a 9" x 13" baking pan or baking sheet with the seam side down.
- Add the onion slices on top of the green bean bundles and drizzle the mustard vinaigrette on top of the bundles (save a little of baste after cooked). Season with pepper.
- Roast for 30 minutes at 350°F degree oven, then turn up the heat to 425°F and cook for an addition 15 minutes or until the bacon is cooked.
