  • 1 cup bacon bits or fresh cooked bacon crumbled or chopped
  • 2 cups shredded Mexican cheese blend divided
  • 8 ounces cream cheese cut into ½-inch chunks ,divided

Instructions

  1. Preheat your oven to 350°F. Grease a 9x13-inch baking dish with butter or cooking spray. In a blender, combine the 4 oz cream cheese, eggs, salt, and half of the 1-½ cups shredded cheese.
  2. Blend until well combined and smooth, about 30 seconds. Pour the egg mixture from the blender into the greased baking dish. Sprinkle the bacon bits over the egg mixture. Sprinkle the remaining shredded cheese over the bacon.
  3. Dot the remaining cream cheese in small chunks over the top of the cheese layer. Bake in the preheated oven for about 30 to 35 minutes or until the center is set and the top is golden brown.
  4. Remove the egg bake from the oven and let it cool for a few minutes before serving. Cut into slices and serve hot.
