  • 4 chicken breast thinly sliced
  • salt to taste
  • black pepper to taste
  • 1 tablespoon Italian seasoning
  • 2 tablespoons butter unsalted
  • 8 ounces mushroom sliced
  • ½ cup chicken broth
  • ½ cup mozzarella cheese shredded
  • parsley fresh chopped for garnish

Instructions

  1. Preheat the oven to 375 degrees Fahrenheit. Salt and pepper 4 thinly sliced chicken breasts and evenly season with 1 tablespoon Italian seasoning.
  2. In a large skillet over medium-high heat add 2 tablespoons unsalted butterr. Cook and brown each side of the seasoned chicken breasts and place in a 13 x 9 x 2-inch baking dish.
  3. Returning to the skillet add 8 ounces sliced mushrooms and ½ cup chicken broth. Simmer until tender pour over the chicken in the baking dish.
  4. Bake uncovered for 15 minutes. Top with ½ cup shredded mozzarella cheese cheese and bake an additional 5 minutes until the cheese is melted and the chicken is cooked throughout. Garnish with fresh chopped parsley for garnish
