Easy Baked Oatmeal
Description
This baked oatmeal blends rolled oats with cinnamon and baking powder, then incorporates milk, maple syrup, eggs or ground flaxseed, melted coconut oil, vanilla extract, and mashed bananas or applesauce. Pecans are mixed in and sprinkled on top before baking at 375°F until golden and set.
The baking process yields a soft yet structured texture with a slightly crisp surface from the toasted nuts. The bananas or applesauce add natural sweetness and moisture, while cinnamon and vanilla give warmth to the flavor profile.
Portion and serve warm, optionally drizzled with extra maple syrup for added sweetness. It's convenient for leftovers and flexible to change nuts or mix-ins according to preference.
Notes explain possible ingredient substitutions like using different oils, sweeteners, or omitting baking powder without impacting results. Various nut and fruit combinations expand customization possibilities.
