  • 2 cups rolled oats make sure they are certified gluten-free if you are avoiding gluten, old-fashioned
  • 4 teaspoons ground cinnamon
  • cup light brown sugar lightly packed
  • 1 teaspoon baking powder
  • ½ teaspoon salt finely ground
  • 2 egg room temperature, large
  • 1 cup milk whole
  • 2 teaspoons vanilla extract
  • ¼ cup pure maple syrup
  • ¼ cup applesauce unsweetened
  • 4-5 dates diced, pitted
  • 1 cup apple about 1 medium sized apple, diced
  • cup pecans chopped

Instructions

  1. Preheat the oven to 350° F.
  2. Spray an 8x8 baking dish with non-stick cooking spray and set aside. 
  3. In a large mixing bowl, add the oats, cinnamon, brown sugar, baking powder, and salt.
  4. Mix well. 
  5. In a medium mixing bowl, whisk the egg, milk, vanilla, maple syrup, and applesauce until well-combined. 
  6. Add the egg mixture to the oatmeal mixture and stir well. 
  7. Fold in the diced apples and dates. 
  8. Pour the oatmeal mixture into prepared pan and sprinkle top with pecans.
  9. Bake for 40 minutes or until a toothpick inserted in the center comes out clean.
