Easy Baked Ranch Pork Chops Recipe

Easy Baked Ranch Pork Chops feature bone-out, thick pork chops marinated in a mixture of ranch seasoning, lemon juice, olive oil, and black pepper. They're quickly seared in a preheated oven-safe skillet and baked to juicy perfection with spooned-on ranch marinade, resulting in tender chops with a flavorful crust. Optional chives garnish provides a fresh finish.

Description

This recipe begins by patting dry thick pork chops, then marinating them in a blend of ranch seasoning, lemon juice, olive oil, and black pepper. The marinade enhances flavor and tenderizes the meat. After at least 30 minutes of marinating, the chops are cooked in a preheated oven-safe skillet heated in a 400°F oven, ensuring a hot surface for searing.

Cooking involves placing the pork chops in the scorching hot skillet and baking for four minutes before flipping and spooning reserved marinade over both sides to intensify seasoning and moisture. Baking continues for another four minutes, allowing the pork chops to cook through while developing a flavorful crust.

Use of cast iron or another oven-safe pan designed for high heat is recommended to achieve the proper sear. Letting the chops come to room temperature before cooking promotes even doneness. Garnishing with diced chives adds color and mild onion flavor to the finished dish.

Ingredients

Servings
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 ranch seasoning I use Hidden Valley ranch packets, you can use 2 tbsp homemade ranch seasoning, too!, packet
  • 1 tsp black pepper fresh cracked
  • 4 1-2 pork chops bone-out, thick
  • 2 tbsp chives optional, to garnish, diced

Instructions

  1. Remove pork from packaging and pat dry.
  2. Add to bag or bowl.
  3. In a small bowl, combine ranch seasoning, lemon juice, olive oil, and pepper, mix.
  4. Cover pork chops in 1/2 marinade mix. Set 1/2 aside for cooking.
  5. Marinate at least 30 minutes, up to overnight. Refrigerate in airtight container if marinating longer than 30 minutes.
  6. Preheat oven to 400 degrees.
  7. Add heavy, ovenproof skillet to oven. I use cast iron - be sure pan is specifically designed to be safe in oven and that you have a good thick potholder.
  8. If refrigerated overnight, remove pork from fridge and let come to room temperature while oven and pan preheat.
  9. When oven has reached 400 degrees and pan is scorching hot, carefully add pork chops to skillet. I use long handled tongs to reduce risk of burning my hands or arms in the super hot pan and oven!
  10. Bake for four minutes.
  11. Flip pork chops and spoon the reserved ranch sauce on both sides of pork chops.
  12. Bake another four minutes.
  13. Check your pork's internal temperature. When pork reaches 145 (about 8 minutes, but remember, pork cooking times can vary wildly based on oven, thickness of pork, altitude, etc.) it is ready to come out of oven.
  14. Rest pork for at least 3 minutes after baking before cutting and serving.
  15. Garnish with fresh diced chives if desired.
  16. Enjoy!
