Description
This recipe begins with extra-firm tofu that has been pressed to remove excess moisture, then cut into roughly three-quarter-inch cubes. The tofu is marinated in a mixture of tamari (a type of soy sauce), rice vinegar, pure maple syrup, garlic powder, and onion powder, which together create a savory and mildly sweet flavor profile. After marinating for 10 to 15 minutes to allow the tofu to absorb the sauce, the pieces are arranged on a baking sheet lined with parchment paper or silicone mat and baked at 375°F (190°C). The tofu is baked for 25 to 30 minutes, with tossing at the halfway point to ensure even browning and formation of golden edges without drying out.

Ingredients
- 14 oz. extra-firm tofu (pressed*)
- 1/4 cup tamari
- 1 Tbsp. rice vinegar
- 1 Tbsp. pure maple syrup
- 1/2 tsp. garlic powder
- 1/2 tsp. onion powder
Garnish (optional):

Instructions
- Cut the pressed tofu into about 3/4″ cubes (or other shape).
- In a medium bowl, make the marinade: Combine tamari, rice vinegar, maple syrup, garlic powder, and onion powder. Stir or whisk to combine.
- Then add the tofu to the marinade. Gently toss with a spatula to coat the cubes. Set aside and marinate for 10-15 minutes while you preheat your oven. Stir the tofu occasionally for even absorption.
- Preheat oven to 375°F (190°C).
- Line a rimmed baking sheet with parchment paper or Silpat. Place tofu on pan in a single, separated layer. (I spoon the leftover marinade over the top of the tofu cubes to maximize the flavor.)
- Bake for about 25-30 minutes, or until edges are golden brown, tossing halfway through.
- Serve immediately, or store in a sealed container in the refrigerator for 3-4 days.
