Description
This Easy Banana Bread combines mashed ripe bananas with oatmeal, eggs, and honey to form a batter that bakes into a moist and tender loaf. Baking takes place in a greased loaf pan at 350°F, with the cooking time varying depending on the pan size but typically falling between 30 and 45 minutes. The bread is done when a toothpick inserted into the center comes out clean. Cooling adequately ensures slices hold together when cut.

Ingredients
- 2 egg
- 1/4 cup honey
- 3 banana medium ripe
- 2 cups oatmeal
- 1 teaspoon baking soda
- 1/4 teaspoon salt optional
- 1/2 cup walnuts optional, chopped
Instructions
- Preheat the oven to 350 F.
- Put all the eggs, honey, bananas, oatmeal, baking soda and salt in a blender. For best results layer the ingredients with the eggs and honey first.
- Blend until mostly smooth. This might take 2-3 minutes depending on your blender. If necessary turn the blender off, shake it and turn it back on.
- Spray a loaf pan with cooking spray and pour the batter into the pan. Sprinkle with chopped walnuts if desired.
- Bake for 30-45 minutes until the middle is firm and a toothpick inserted comes out clean. The time will vary depending on the size of your loaf pan. Check every 5-10 minutes after 30 minutes have passed.
Notes
- Maple syrup or molasses can be used instead of honey for a variation in sweetness.
